Aluminum is a Toxin and when mixed with your food and it can be damaging to your health. Waterless cookware is made of high grade stainless steel to protect the food from leaching or from contact with metal. Stainless steel is also easier to clean and does not require such coatings as Teflon, which acts as a toxin when mixed with food.
