Copper is very expensive, but conducts heat better than any other material. Heat conduction allows your food to cook evenly. You will undoubtedly find cookware that is constructed from stainless steel with a copper reinforced bottom. The problem with this type of cookware is that the bottom of the food will cook faster than the rest, making it very difficult to avoiding burning and/or scorching your food. Braising is out of the question in a stainless steel pan with a copper reinforced bottom.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;You need cookware that allows heat to be distributed evenly. You are probably very familiar with pans that have hot spots. Hot spots are places in the pan where the food cooks disproportionately faster than in the rest of the pan. Cookware with even heat distribution is imperative if you are serious about the food you cook. The problem with copper, cast iron, and aluminum cookware is that certain foods will absorb a metal taste and color from the pans, not to mention you will ingest some of the metal that is transferred to the food. Copper will scratch and discolors easily, but every cook should have at least one copper bowl for beating egg whites. Copper bowls will allow you to beat eggs whites to their maximum volume.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Aluminum is inexpensive, but as mentioned before, will react with certain foods in an unfavorable manner. Aluminum wears down quickly, although there are anodized pans that will cut down on reactivity and increase durability. If you opt for aluminum cookware, anodized is the best choice. It's moments like those that complete a camping trip for me. I just couldn't imagine anything better.&lt;br /&gt;The smell of good coffee is secondary to its warming effect on your morning soul. In fact, a camp without it could be plumb dangerous. You'd know exactly what I mean if you saw our gear editor, Michael Burch crawl out of his tent and found his trusty coffee pot missing.&lt;br /&gt;&lt;br /&gt;But his likeness to a bad-breathed grizzly bear in the morning is something he has in common with masses of people around the country. From cowboys to computer technicians, a cup of coffee is considered the morning go-juice. And in camp it's especially necessary to drink coffee and lean against a rugged-looking tree wearing a red and black plaid shirt while observing the rising sun. At least that's what Burch tells me.&lt;br /&gt;&lt;br /&gt;Unfortunately, I've never witnessed this "lumberjack mystique" when I've camped with Burch. Most the mornings I've camped with him, he'll be sitting next to a campfire with a Superman sleeping bag wrapped around his shoulders like a shawl. Once he manages to open an eye, he brews some kind of swill he calls coffee.&lt;br /&gt;&lt;br /&gt;His coffee, good or bad, comes from one of our can't-do-without camp items. It's a 12-cup stainless steel percolator from Bass Pro Shops. Of all the camp gear, it's one item that remains pre-packed in a corner of the campbox. It's brewed an uncountable number of cups and has overheard many mornings of complaints about how sore the previous day's hike made us.&lt;br /&gt;&lt;br /&gt;Brewing coffee in the pot is easy. It has a bail handle that cools quickly so you can move your precious cargo from the fire to your cup. It has a clear glass dome on top so the perking action can be seen. It's also made from heavy-duty 18/8 stainless steel. All it takes is a little ground coffee and water.&lt;br /&gt;&lt;br /&gt;Coffee isn't the only thing its good for. Anytime you'd need warm dishwater just set it over the fire. When it's not brewing java it's most likely being used for something around the camp. A percolator is just one of those indispensable items. I can, and I have three or four of them cast iron skillets, still in very good shape. What has to be done to get them back in working order, is the question. Here's what I came up with. &lt;br /&gt;&lt;br /&gt;The first order is to get them clean, free of rust spots and ready for curing, or seasoning. Scour the rust spots off with steel wool, wash with mild soap and very hot water, and dry immediately while still warm. The drying part is very important for the prevention of rust, if you are not going to season your pan right away.
